The two benefits of this cold winter weather: less insects in the summer and more soup for supper! I bought several packages of tortellini’s when they went on sale, but my husband didn’t care for them with meat sauce, so I needed a recipe to use the rest of them, Totally Tortellini Soup (he ate two bowls)!
Totally Tortellini Soup
3 tsp. minced garlic
1/4 cup finely diced onion
1 tbsp. olive oil
2 cans condensed tomato soup
1 pint of canned diced tomatoes or 1 can of fire roasted diced tomatoes
2 cups chicken stock
1 3/4 cup of half-and-half or 2 cups if you want it creamier
1 tbsp. Italian seasoning
1/2 tsp. salt or Italian seasoning Mrs. Dash
1/2 tsp. pepper
2 9 oz. packages of your favorite tortellini (I used one pkg. of cheese and one pkg. of chicken & prosciutto tortellini)
3/4 cup shredded parmesan cheese for topping
Heat olive oil in large soup pot, sauté garlic and onion until tender. Be sure not to burn garlic. Add tomato soup, tomatoes, chicken stock, half and half and spices. Heat on medium heat. Add tortellini’s, simmer uncovered for 20-30 minutes. Ladle into bowls and top with parmesan cheese.
